Servings: 6-8 people
Ingredients:
5 cups of white rice
6 1/2 cups of water
2 tbsp canola oil (for onions)
1/4 c. of brown sugar
1/2 c. of canola oil (for rice)
1/4 c. of teriyaki sauce
1 tbsp of soy sauce
1 lb. of fully cooked grilled chicken strips
Half a bag of frozen mixed vegetables
1 onion
5 eggs
Directions:
(Note: I have this microwavable rice cooker. It's the bomb. But any rice cooker would work just as good. So the way I cook my rice may be different than the way you cook it depending on your cooker.)
Put 5 cups of rice into cooker and add 6 1/2 cups of water. Cook in microwave for 20 minutes. While rice is cooking, grill onions, cook chicken, scramble eggs, and warm vegetables. Grilled onions--chop one onion into desired size (onions shrink when grilled). Put into a small pan on the stove. Add oil and brown sugar. Turn to medium/low and stir occasionally. Chicken--put on a microwavable plate and warm in microwave. Cut into bite-size pieces. Scrambled eggs--scramble eggs in small pan on the stove, easy peasy. Vegetables--microwave or steam them, another easy peasy.
When the rice is done cooking, scoop it up and put it in a large, deep pan or a large bowl. Cover. Add oil, teriyaki sauce, and soy sauce. Stir. Add grilled onions, chicken, eggs, vegetables. Stir, and serve.
(Note: if you want to put the rice in a large, deep pan (there will be a lot just so you know) and keep it warm, I would recommend covering it rather than turning the stove on. In the past when I have had the stove on, it has burnt some of the rice. Be careful! If you choose to do it this way to keep warm or warm up, make sure you constantly stir, or you just might get some crunchy rice.)

ReplyDeleteI went through that phase, of not cooking when we first got married. It's hard because you grow up with your mom or dad cooking, then all of the sudden you're single so you eat out every meal (or do the basic like pasta haha) and then you get married and all of the sudden have to know everything? Haha! Anyways- I had to get good at it because of my celiac disease, I have three options when I go out to eat. What helped me is my sister-in-law's recipe blog. All of it's vegetarian, but SOOOOOO delicious, and VERY simple. Whenever I don't know what to cook and I need to change it up, it's my go-to blog. Serious.

Um....I am also secretly obsessed with the show Revenge... I can't get enough of it! And you just made my week with the news of Justin Bieber's Christmas album! I had no idea that was coming out and I am slightly over the top when it comes to christmas music so it's always good to add some new tunes to the mix.
ReplyDeleteAwwww. This reminds me of when you would cook family dinners for us when Matty and I were only engaged. We'd eat fried rice, play cranium, and watch approximately 4 episodes of 24. You don't know how much I wish we could be neighbors!!!
